Maqluba

Lamb or Chicken Maqluba is one of Liberty’s famous and favorite dishes, by customers and Liberty’s family alike.

Liberty’s Mediterranean’s family is of first and second generation American Palestinian background. Owners Mohammed and Hana and family take pride in their roots and love sharing their favorite Palestinian national dish - Maqluba. Maqluba in Arabic means “upside down”. Mixed with luscious lamb or chicken, fried eggplant, potatoes, tomatoes and wonderfully seasoned basmati rice with vermicelli noodles, makes it irresistible.
